        ¾ cup shortening

 

        ¾ cup coconut sugar

 

        2 eggs

 

        2 tsp. vanilla extract

 

        2 ½ cups almond flour or meal

 

        ½ cup coconut flour

 

        ½ tsp. sea salt

 

        ½ tsp. baking soda

 

        Frosting

 

        2 cups shortening

 

        2 Tbsp. Nutiva Organic Virgin Coconut Oil

 

        2 cups powdered sugar

 

        2 tsp. vanilla extract

2. Preheat the oven to 350 degrees.

 

3. In a large bowl, combine the almond flour, coconut flour, sea salt and baking soda. Set aside.

 

4. On medium speed, using a stand up mixer, hand mixer or food processor, combine the shortening and coconut sugar until creamy.

 

5. Add the eggs and vanilla extract.

 

6. Add the dry ingredients and beat until just combined.

 

7. Form the dough into a ball and chill for 30 minutes.

 

8. Place the dough between two layers of parchment paper, dusted with coconut flour, and roll about to about ½ inch thick.

 

9. Use cookie cutters to create desired shapes.

 

10. Place cookies on a parchment lined baking sheet.

 

11. Bake for 12-13 minutes, until golden.

 

12. Let cool before frosting. Makes about 2 dozen cookies.

 

Frosting

 

1. Using a stand up mixer, hand mixer or food processer, combine the shortening, coconut oil and powdered sugar until smooth and fluffy (about 2-3 minutes). Add the vanilla extract.

 

2. Add natural (vegetable-based) food coloring, if desired, or leave white.

 

3. Ice cookies using a pastry bag or simply spread with a knife.
